Hospitality Fruit Cake

Not your mothers fruit cake!
|
1 3/4 cup butter
2 cups sugar
4 eggs
1 cup buttermilk
1/2 tsp vanilla
2/3 cup cherry preserves
2/3 cup pineapple preserves
2/3 cup apricot preserves

3 cups flour
1/2 tsp allspice
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp baking soda
2 cups coarsely chopped pecans

Grease and flour tube pan.
Cream butter and sugar together
Add eggs -- mixing well.
Sift flour together with spices and baking soda.
Add flour and buttermilk alternately to butter/sugar mixture.
Lightly stir preserves and pecans into batter.
Bake at 350 for approximately 90 minutes, or until top springs back when
touched lightly.
This is a delicious, rich cake that is perfect for the holidays. Just don't tell
folks that it's called a fruit cake! | |
