Spicy Sausage Bread
This is a VERY unusual bread. It's a bit yucky looking to make, but is a tasty addition to your brunch menu. I've given out the recipe numerous times!

 

1 cup raisins
1 lb hot (raw) breakfast sausage
1 1/2 cups brown sugar
1 1/2 cups white sugar
2 eggs
1 cup chopped pecans
3 cups flour
1 tsp ginger
1 tsp pumpkin pie spice
1 tsp baking powder
1 tsp baking soda
1 cup cold coffee

  • Simmer raisins (in water to cover) for five minutes, then drain.
  • Mix raw sausage, brown sugar, white sugar and eggs together.
  • Stir in nuts and raisins
  • Blend coffee and baking soda together, set aside.
  • Mix flour, spices and baking powder together.
  • Blend coffee and flour mixtures into the sausage mixture.
  • Pour into a well greased/floured 9" tube pan.
  • Bake at 350 for 90 minutes.
  • Good served with cream cheese or apple butter.
